WEEKEND RECIPE CHALLENGE: WEEK 1

I have selected the recipe I’m going to attempt this weekend.  I am working with Rick Bayless’ Mexico, One Plate at a Time cookbook and I will be attempting Creamy Enchiladas with Chicken, Tomatoes and Green Chile (otherwise known as Enchiladas Suizas).  Wish me luck – not sure when I’ll make it this weekend but I will surely blog about the experience!
